Freshen Up Your Dessert Menu

It is springtime and all our go to recipes are starting to feel a bit stale.  Keeping seasonal recipes in your rotation can help keep you from getting burnt out on your favorite meals or desserts! Our owner’s favorite springtime dessert is Lemon Bars.  Try their recipe to help your home smell delicious and have a fresh treat.

For the crust:

2 cups sifted all-purpose flour

1/2 cup sifted confectioners sugar

1 cup softened butter

For the topping:

4 eggs

2 cups granulated sugar

1/3 cup lemon juice

1/4 cup all purpose flour

1/2 tsp baking powder

Preheat oven to 350F

Sift together the flour and confectioners suger together. Cut in the butter, mixing it into the flour mixture between slices. Press into a greesed 9x13 baking pan and bake for 20-25 minutes or until golden brown.

For the topping: Beat eggs, sugar and lemon juice together. In a small bowl, sift together the flour and baking powder. Mix the flour and baking powder into the egg mix. Pour the egg mix over the crust while it is still hot and make for 25 minutes or until the top does not move when you tilt the pan.

Finish off by sprinkling powdered sugar on top.

Allow to cool completely before cutting.

Until next time,
